1 1/4 cup milk
2 1/4 teaspoons active dry yeast
8 tablespoons unsalted butter, melted and cooled
1/4 cup sugar
1/2 teaspoons salt
4 1/4 cups flour (all purpose)

1-Heat the milk until just warm, Pour it in a large bowl, add the yeast, stir it lightly and let it sit until it foams up.
2-using a dough hook of an electric mixer, mix the eggs, butter, sugar, salt and yeast mixture. Add 2 cups of flour and mix. Then start adding the rest of the flour gradually until the dough pulls away from the sides of the bowl.
3-Transfer into an oiled bowl, cover with a kitchen towel, place it somewhere warm and let it rise until it doubles in size about an hour.
4-Put the dough on a floured surface and knead it into 1cm thickness then using donut cutters cut out the donuts. if you want to make filled donuts, do not make holes in them.
5- Place the donuts on floured baking sheets not close to each other and cover them with a kitchen towel and let them rise for 45 minutes.
6-Heat the oil over medium heat and fry each donuts for about 45sec to 1 minute on each side. do not fry too many at once. I find that chopsticks are easiest for picking up the donuts from oil.
7-Prepare the glazes and fillings that you like.
For a regular sugar glaze: mix 1/4 cup milk with 2 cups powdered sugar.
For a raspberry or fruit glaze: mix the fruit puree with powdered sugar till it reaches the thickness you like.
For a chocolate glaze: 1 1/2 cups powdered sugar +4 tablespoons cocoa powder+ 2 tablespoons milk or water.
Dip the donuts in the glazes and top off with sprinkles if you like and enjoy.
