Labneh is yogurt cheese. It is more like thick Greek yogurt. With very simple ingredients you get this delightful food for breakfast or simple dinner. You can also use it instead of mayonnaise for a lighter version of dips or dressings.
1 kg Goat’s or cow’s milk yogurt
3/4 teaspoon Salt
Stir the salt into the yogurt, place it into a linen cloth and then over a sieve with a bowl under it. If the weather is hot, keep it in the fridge. With time, the whey will strain out and keeping the labneh in the cloth. You can choose the thickness you prefer. To serve, just spread it in a dish or over your bread with virgin olive oil. Enjoy!
