Oven Grilled Chicken



1  kg whole boneless chicken

½   teaspoon turmeric

¼   teaspoon white pepper

¼  teaspoon cumin

1  teaspoon Paprika

1  teaspoon dry coriander

2  teaspoons thyme

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon red pepper chili flakes

1  teaspoon sumac

1  teaspoon lemon zest

1  tablespoon mustard

2  tablespoons yogurt


2  tablespoons olive oil or butter



– Mix the spices, add the yogurt and mustard, then cover the chicken with the mix and leave it in the fridge for at least an hour and if all night it is better.

– Put a tablespoon of oil in the oven tray and then put the chicken and spread a tablespoon of oil on the surface of chicken

– Cover the tray with aluminum foil and put it in a 200°C oven for an hour then remove the aluminum foil and ignite the oven fire from the top to the maximum temperature while keeping the lower one on. Keep it in oven for 15 minutes or till it’s golden brown.
